Healthy Sloppy Joes

Here is a great new recipe I came up with tonight and the Family LOVED it!!

Preface:  I'm not much of a sloppy joe girl, but this was a request from Hubby & the kids, so I decided to make it MY way...the healthy way.  


HEALTHY SLOPPY JOES

1lb. of  Lean hamburger meat / Or turkey meat
1 large zucchini shredded
Onion Powder
Pepper
1 can of Sloppy Joe Sauce (I used a can large enough for 1.5 lbs. of meat, Hunt's brand)
Whole what rolls/buns
2 handfuls of Spinach leaves

Directions:
While cooking the hamburger meat, toss in the shreds of zucchini to cook down to a softer texture.
Drain meat/zucchini mixture and season with pepper, onion powder or anything else you'd like.
Add half of your can of sloppy joe sauce and let it simmer

*I found that the zucchini would absorb some of the sauce so I ended up using almost the whole can meant for 1.5 lbs. of meat,which makes the mixture go farther for a large group

Toss your handfuls of spinach in a few minutes before you serve the sloppy joes so that the spinach beings to wilt but is not fully limp.

Serve sloppy joe mix hot on a whole wheat bun or roll.  We added a little sprinkle of cheddar cheese on top and let it melt.

The green veggies are hidden in the sloppy joes and so you can serve your meal with fruit or a different type of vegetable.  I love hiding veggies in foods for the kids b/c they are eating healthy and don't even know it.
I served our sloppy joes with a bowl of fresh Cantaloupe and we had some frozen corn nuggets that we BAKED in the oven to go along with our meal.  Yummy!  Enjoy.
